This is my favorite Chinese green tea. I think it's better than a good long jing even. I use more leaf than usual for this one, with 7 grams per 100ml of water.

The smell of the wet leaves match the flavor of each sip. I measure other teas with honeyed notes to this tea. While all batches may vary, I have ordered this twice and so far, I am enjoying this grade of Tan Yang.

There are no added flavorings, of course. The magic happens during the slow fermentation. Tan Yang is left to oxidize for a very long time in humid environments. This transforms polyphenols into thearubigins (which gives it the dark color) and develops aromatic molecules that our brain associates with cocoa. It is a perfect natural sensory illusion.
